Spring Bay: A Maritime Masterpiece

The Quest for Excellence

When we first started our independent bottling odyssey in 2020, Spring Bay Distillery was one of the first names on our lips. Their whisky quality made them an obvious choice, with whisky enthusiasts calling them ‘Little Springbank’, for good reason too. Owners and distillers Cam and Suzy Brett have created their own slice of Tasmanian, sea-side heaven. Their releases showcase a subtle maritime profile, sharing a similar terroir with the iconic Springbank distillery in Campbeltown, Scotland. Read our BLOG HERE

The Exceptional Cask

We selected one super dusty 100L Apera cask for maturation from Willie Smith’s, a 4th generation apple brandy maker. The cask’s journey fascinated us, as it began as a 225L vessel, re-coopered down to a lightly toasted 100 litres. The result left us in reflective pause. The wooden vessel offered delicious wafts of molasses dripping with sticky, sherry goodness and distant licks of maritime funk throughout.

Bold Character

It delivers one huge pour with no apologies needed, as we embraced the roaring and barbarous nature of this expression. We curated this whisky for seasoned whisky lovers with educated palates. And the cask surrendered her angels share as mostly water, weighing in at a powerful 65.8% ABV, with a yield of only 112 bottles from this exceptional cask.

Artisanal Bottling Process

We use a simple quarter inch steel sieve during bottling that would fit in the palm of your hand. This catches any pieces of wood or char from entering the bottle, and that is it! This means all the ‘good stuff’ that creates a viscous and full-bodied flavour missile remains in the bottle for the perfect pour.
