Representing Killara Distillery under our independent label was a no-brainer, as owner and distiller Kristy Lark-Booth produces phenomenal whisky. The distillery has achieved the word that many Australian whisky distilleries breathlessly strive for. And that word is ‘Consistency.’ Killara delivers consistently delicious spirit.

A Rare French Oak Treasure

This is one special Killara, aged to perfection for five years and five months in a 100L French oak, ex Port cask. It represents a masterpiece of cask and spirit synergy, rewarding patience in the glass. The whisky drinks big and brassy, showcasing one of Tasmania’s finest offerings.

Our Natural Approach

Like all our Australian expressions, we bottled this beauty straight from the cask, using a simple quarter-inch steel sieve. This is done to catch any pieces of sediment and/or hessian flecks from the bung. Nothing else comes between cask and bottle.

Unapologetically Bold

We make no apologies for our bold, cask strength whiskies, with this Killara expression delivering full flavour intensity. Only untamed spirits can offer this experience. We use zero chill-filtration with absolutely no coloring, ensuring all organic flavors remain in the bottle.

The Texture Experience

This preservation of natural elements creates a silky texture, that hovers over the palate with each sip. The result is a truly authentic Killara, free from artificial alterations that would otherwise compromise craft integrity.

Tasting Notes

Nose: Sugar syrup sweetness and bright, blood orange notes are followed by deep espresso aromas rounding out the aromatic profile.

Palate: A beautiful, chewy mouthfeel coats the tongue, with dark chocolate richness developing mid-palate. Then, familiar Christmas spice adds festive complexity.

Finish: Warming custard notes emerge on the finish with some old leather adding depth. Gentle cinnamon spice lingers pleasantly.

Limited Release

Only 53 bottles exist of this tasty number. Each bottle comes individually numbered, and whisky collectors should act quickly to secure a piece of Tasmanian distilling excellence. Because once they’re gone, they’re gone for good!

About Killara Distillery

The Killara distillery is located at 32 Ogilvie Lane Richmond, a picturesque 30-minute drive out from Hobart in Tasmania. It’s owned and operated by Kristy Lark-Booth, a second-generation distiller with over 18 years’ experience in the distilling industry. Kristy gained her experience through working for many years at her parents’ operation, Lark Distillery, as both the head distiller and general manager. During her time at Lark Distillery, the whisky that Kristy produced won numerous awards both nationally and internationally. So, in 2016 it was inevitable that Kristy would branch out on her own and continue the family tradition of producing hand-crafted premium spirits.

We love the passion Kristy brings to her craft, and the traditions she has chosen to carry with her into her newest ventures. Regarding Killara, Kristy tells us “The still I have chosen is similar to the one that stood outside my bedroom as I grew up and prompted me to join the family business all those years ago. My 600-litre copper pot still was made in Hobart by Aircon Industries in a traditional, but not usual shape, with the condenser being at the top of the still rather than at the side. This produces a smooth, distinct spirit that I can’t wait to share with you all.”
