A Rare Australian Find

It’s not often you find Australian whisky matured in a single, wheated bourbon cask. In fact, this just might be the first of its kind on our fine shores. When we discovered this 47L cask in Otter Craft Distilling bond store, we hoped for exceptional liquid, and that’s exactly what the spirit thief confirmed. Head distiller Eduard Otter took some convincing to let the cask go. However, we persisted because it fitted all our parameters to wear the Truth and Consequence label.

Unique Cask History

West Fork Whiskey Co in the USA originally commissioned this American Oak cask. Then, the Barrel Mill recoopered it on March 24, 2017, with a Char #3 blazing.

Tasting Notes

Nose: Rich burned caramel dominates with inviting notes of toasted marshmallow and cinnamon zest. The char influence shows beautifully here.

Palate: A delicious, sticky mouthfeel coats the tongue. Then, concentrated dried cherry flavours blend with warming gingerbread spices.

Finish: A lingering, juicy conclusion features elegant cigar box aromatics and lively pepper spice that continues to evolve.

We bottled this whisky for seasoned whisky aficionados. You’ll experience a REALLY big flavour profile – chewy and complex, bottled straight from the cask with zero chill filtration or added colour.

Our Simple Process

For this expression, and like all our Aussie offerings, we used a simple quarter-inch steel sieve during bottling. This is to catch any sediment or char flecks from entering the bottle. Nothing else comes between cask and bottle!

Natural Character

On very cold mornings, this whisky may turn cloudy – affectionately known as the ‘Scottish Mist’. This happens because we preserve all the beautiful oils and fatty acids that add flavour and viscosity to the whisky.

The Scottish Mist Magic

A quick shake of the bottle or as the day warms up, the Scottish mist disappears, but the flavours remain. Almost like a magician’s final act.

Limited Availability

This raw, flavour-packed Otter Craft Distilling release yielded only 33 bottles at 68.25% ABV under our supervision. Though we’d love to keep a portion of the release for our personal drinking stock, we much prefer to share the love with our supporters.
